Let it simmer for 40 minutes or boil for 20 to 25 minutes. Afterward, refrigerate the cooked rice for 12 hours, requiring prior preparation.

According to the researchers, this approach allows the oil to penetrate the starch granules during the cooking process, creating a protective layer that alters the rice granule structure. Consequently, the granules become resistant to the digestive enzyme, resulting in fewer calories being absorbed by the body.

Interestingly, the cooking process is only part of this fascinating food chemistry experiment. During the extended cooling period, as the rice starts to gel, the amylose—the starchy component of rice—separates from the granules. The 12-hour cooling period also facilitates the formation of hydrogen bonds between the amylose and external molecules, transforming it into indigestible starch.

Thankfully, consuming the rice cold and sticky isn’t necessary to maintain its reduced calorie content. The scientists confirm that reheating the rice at a later time does not alter its chemical composition.
